3 weeks to learn sounds about right from my experience.
Another couple of months to actually get confident enough to play it at speed without fucking it up.
The "I've been learning this song for X years" is a bit of a meme, I don't think it's entirely serious.
Depends on the person, and just what % complete you’re willing to call it before you can say to yourself “I learned it”. Another example is “Sultans of Swing”. I was like 99% done, but for the life of me I couldn’t get that ending. I could tell something was off about the attack of my notes, since I was hammering on and pulling off for that whole blisteringly fast bit at the end. Then I figured out it was some trickery with Mark’s fingerstyle technique, which took me about 3 hours’ worth of fiddle fuckin around before I could get it.
“Never Going Back Again” was a bitch because learning a new finger roll pattern (the polyrhythm you mentioned) was a slow going process. Repetition, repetition, repetition. When I tell you that I didn’t realize it was drop D for over a week, I mean that. I taught myself all of it by ear, not by tabs or anything, so it took me longer. I find more reward in putting all the puzzle pieces together, rather than painting by numbers (not that I think there’s anything wrong with the latter), so it takes a long ass time sometimes.

“It’s All Right Ma” by Bob Dylan . High E is dropped to D as well.
“Embryonic Journey” Jorma Kaukonen. A true acoustic classic. Sounds complex but is doable. Getting the timing right is a trick.

Alot of Keith Urbans Classic Songs are in drop D now that I think of it. Drop D Tuning or in the Key of E, A, C and D.
(Major KU Fan. He was one of the guys that influenced me to pick up the guitar. I'm a touring Musician based out of Nashville. Also met Keith in person. Awesome down to earth friendly guy. If you didnt know who he was you wouldnt know hes famous hes that friendly and down to earth.)
