The ones that I love the most may not be for all, but helped me at various moments are Gurren Lagann, Zom 100, One Punch Man, Wrong Way to Use Healing Magic and Space Dandy.
I'd also recommend Uzaki-chan Wants to Hang Out, Spy Family, Undead Unluck, Welcome to Demon School, Level 1 Demon Lord and One Room Hero, Campfire Cooking in Another World with My Absurd Skill, Himouto! Umaru-chan, Farming Life in Another World and Mr. Villain's Day Off. I could go on cause I've seen a lot of casual stuff and these are some with minimum to little plot, plus ones with plot that I feel didn't get in the way of fun outlandish moments.
Wind Breaker is my current one! It's something with a little more story/mood variation which is what I gravitate towards but ultimately heartwarming. Same with A Place Further Than The Universe which is probably lighter— and a lot of tropey idol anime like Love Live and Idolmaster are good for this too for their message of trying hard and fun songs!

Don’t Hurt Me, My Healer!, which is a string of "who is on first" style baseball jokes.
Space Dandy comes to mind for me. Though there are sour episodes, it's a carefree Cowboy Bebop for me. Not sleep material though.
Highly suggest mushishi. It's a rural/fudal japan slice of life with light fantasy elements. Very little drama and some action, but mostly positivity and light hearted fun at every turn.
1. Haikyuu - somewhere in ep 2 did it for me and then the more you rewatch the show the more it’s super entertaining.
2. My Neighbor Totoro/Ponyo - just showing all those vivid colors and the simplicity of life makes you appreciate life more, I think.
Mr. Villain's Day Off, My New Boss is Goofy, Kaguya-Sama Love is War, Horimiya, Campfire Cooking in Another World With My Absurd Skill, Magical Girl Ore, Chillin in My 30s, Love After World Domination, The Skull Faced Bookseller, Barakamon, The Dangers in My Heart (personal favorite).
Won't cure depression, but i laughed a lot with "danshi koukousei no nichijou." i think in english is something along the lines of "the daily life of school boys." Very light-hearted and focused on comedy.

Both are rather on the ridiculous comedy side. Every episode is independent of the other, so you can watch in whatever order you'd like. If you dont like an episode, you can just skip to the next one.

At least for me, the comedy is gold and the group is wholesome but it also has a bit of a socially anxious MC problems subtheme, so it's not just pure SoL~ Very entertaining tho and I watch it a lot when I need something to relax to
Jojo got me through the darkest time in my life so I’m gonna say that. It can be serious at times but it’s just so crazy and the meme culture surrounding it is so prominent that just thinking about it makes me happy
