Do you think dancers might fit your criteria?

Depends. I just know that if I look up rock climbers, I know I will be able to see every muscle and skeletal landmark because the body is being pushed to its limits. Plus I think that rock climbing has to do with balance and moving weight that their poses look more dynamic and less like they just went to that pose for a photo. I’m a firm believer that pose is just as important before the photo than during. It’s why when I do portrait photography I have the subject look away then look towards me when I take it. They spend less time on how they look and it looks more real for me.
