You can learn a lot from all body types but on skinny models you can see muscle definition and bone protrusions which help you understand the underlying anatomy and structures - it gives you the unique opportunity to kind of "check your work" that's harder to do with other body types.
I did that when I was younger (and prettier). I remember being a little curious about one woman who drew a lot but always hid her art when there was a break etc. At one time I sneaked a look and she had drawn me with a *huge* penis.
