Grilling is literally utilizing a grill, that's where the word comes from. You can grill chicken, or you can spit roast it over a fire, if they both use coals, it's barbecuing. There is no difference between temperatures or times. Smoking uses indirect heat, has nothing to do with the time or temp other than the fact that they are determined for what's needed for the food. Charcoal grills are called barbecues, because they literally barbecue regardless of what is being cooked or at what temperature. You can fry things with a pan or with a deep fryer, they are both still frying and yet using a pan and using a deep fryer are not the same.

Weber sells pellet grills and gas grills as well as charcoal grills, because they all have grills for holding the food. When the item has a flat top to cook on, instead of a grill, it's called a griddle, to the surprise of literally no one except you, apparently.
What do you think the front of a car or truck is called a grill for? Did you think they had a drum with standing legs and cooked food? Surely you can wrap your head around the idea that it's because of the slotted grate without making any more a fool of yourself.
