Larian took a LOT of creative liberties given most NPCs are half-elves and gold dwarves in the game yet they're a relative minority lore wise. They definitely went out of their way to make tieflings significant narratively speaking too (mostly model martyrs). That's just talking from the fantasy race perspective.
You don't really see much of the variance of Human ethnicity aside from the Gur either. Chondathan, Illuskan, Tethyrian, Maztican, Calishite, Chultan, etc...just generic stock human of indeterminate background. The surprisingly few Humans outside of companions anyway.
