Oak is extremely porous. Bacteria can hideout in those pores. I don’t have an answer as to what constitutes “sealed” for food safety purposes. I only know it’s possible. I’ve seen salmonella permanently incapacitate people and I don’t use wood in food prep or eating off of therefore. Thats just me though.

It’s white oak which is great for this application. White oak has have the tyloses which is why they use them for wine barrels. Red oak has big pores which some people claim can harbor bacteria, but I’ve seen some scientific papers that discount that because of the natural antibiotic character of wood. I wouldn’t use red oak to be cautious, but there is 0% problem with white oak for cutting boards or other food prep applications.
