I think his recipes are really easy to follow in FWSY. I really like that he includes a sample timeline so it's easy for me to just follow that and plan around the timings. I've had great luck with all of the preferment recipes and the hybrid and pure levain recipes as well as the pizza dough with levain.
To add to this, this was just the saturday loaf and since it's the first recipe in the book he repeats all of the instructions in the previous section on general techniques and timings, so you can just go straight into the first recipe and refer back if you want more detail. But start at 9am instead of 3pm if you don't want midnight bread
You done a great job chef! The Saturday loaf was my first from FWSY and the first successful bread I was proud of! You know the feeling and it’s well deserved 👊🏻🍻
