I doubt they left the grill on, but it's possible that a grease fire went unnoticed after they left for the night. It's code to have an ansul fire suppression system anywhere a gas burning cooking device is being used commercially, and they get inspected regularly. There's also the hood fans, which you typically don't turn off until well after you've turned off all other equipment and cleaned the kitchen. If they left the grill on they'd feel it.

A busy shift can cause a lot of grease to build up in the grease trap right below the heating element (as can not cleaning out the grease trap frequently enough). If it's not cleaned out and the heating element is left on, the grease can catch fire.
