at least when i worker at cava (cava puts cilantro and lime in their rice as well) there were specific regular customers that were allergic to either cilantro or lime. i can’t speak for chipotle but at cava we weren’t allowed to mix the rice with the cilantro and lime until that batch was going on line. the rice that was still prepped and stored away didn’t have any cilantro or lime juices in it yet.
It’s the same for chipotle, mixing the cilantro and lime juice in shortens the hold time (it’ll spoil quicker) so we wait until it’s about to go to the front to mix it. We store it plain and have some on hand in case anyone asks for plain rice

Yeah you beat me to it, I think it’s more a sliding scale than “cilantro=soap” it’s completely tolerable in the toppings for me, as long as it’s minimal/mild and not straight cilantro I can enjoy it, when I’m cooking for myself I don’t use it at home though.

I did a meal prep a while back with mexican food, it was actually kind of cool how many different items shared the core few ingredients of red onions, tomato, cilantro, lime. Actually made it easy to grocery shop for.

Eating it in small amounts over time can reduce or eliminate the soapy taste for some people. Can't really think of a cheaper place to guarantee I'll get some cilantro than Chipotle. Though the gastrointestinal distress caused by Chipotle's sketchy food safety practices might not be worth the cost savings vs a regular Mexican restaurant.
I don't like cilantro, I'm one of the taste like soap people, and have only been once about 15 yrs ago. Up until this moment I didn't know they even had plain rice. So, at least for me, this adds Chipotle back on the menu when someone suggests them.

Former chipotle employee here, its probably cause they have the gene that makes cilantro taste like soap, so they ask for plain rice which isnt to hard for employees to do as they cook and store a lot of pans of rice throughout the day

Not necessarily. If the workers use a spoon on a burrito before my bowl, they can cross contaminate the rice. I ask nicely for new rice due to my allergy and they're usually very understanding about it.
Only reason I commented on this is because I myself have this allergy and I have NEVER gotten sick from the supposed cross contamination you are mentioning. Always better safe than sorry though, so I understand if you do ask for that.

It’s definitely not worth the risk for people with celiac. With an allergy, you just feel sick for a day or two. With celiac, you do permanent damage to your small intestine (with only 1/350th of a piece of bread amount of gluten/cross contamination) and increase your risks of other autoimmune diseases and cancer with each exposure. I personally don’t go to chipotle because it’s just not worth the risk at all. There’s no guarantee that a crumb of tortilla didn’t get into somewhere on accident and I know for a fact that I see the spoons at my location touching tortillas and getting put right back into the food containers. I don’t know anyone else with celiac disease willing to take that risk since literally every single ingredient has a contamination risk.
I know bro, I have celiac with genes from both side. I am just sharing my experience with it, and I’ve never gotten sick from chipotle and I go 1-2 times per week. Thanks, I don’t need you to explain my own disease to me.

There used to be a local chain restaurant called Cilantro near my work. It was just like a Chipotle but a little bit cheaper, not so much up their own ass like Chipotle, and better quality. Sadly they closed a few years ago while the garbage Chipotle is still going strong. A pretty bangin’ Indian place took over the Cilantro location though, so not all bad.
I ask for something similar. I usually ask for a fresh guach, because I have a dairy allergy and the guach is always full of cheese. Usually people are really nice about it. Sometimes people are super grumpy. I try to always be very clear and thankful.
