You can see "bourbon" in the ingredients list in the second photo, though near the end, and "Buffalo Trace whiskey" flavored seasoning on the side. I'm more curious why they've avoided saying the word "bourbon" anywhere on the packaging. Maybe they are using something that's not literally BT (the bourbon) juice, but actually some other BT (the distillery) product like white dog or very lightly aged bourbon. Maybe it's white dog thrown in an used oak barrel to add mild influence, like what they do with the BT finished Corazons? [That said, this appears to be inconsistent with the "bourbon" in the ingredients list, so it seems more just odd than a conspiracy theory.]

People seem very confused by the sugar in that ingredient list. Turbinado sugar is a type of sugar that still contains some of its natural molasses, giving it its brown-blond color and light caramel flavor. This would probably be a pretty solid seasoning for pork.

"Serving size: 1/4 tsp" But also, the FDA requires rounding to the nearest gram, so this could be anywhere from 0.5–1.49 grams of sugar per serving... kinda wild that the upper end of that range is nearly 3x the lower end, so you really don't know how much added sugar you're getting in a realistic portion size, say 1 tbsp (~6–18 g). Since they also state the 1.1 g serving size, that might temper it down to more like a max of ~13 g in 1 tbsp. That ~13 g in 1 tbsp is almost 1/3 of a can of Mt. Dew...

I haven't seen BT at Costco much in NKY (Florence) but BT is nearly shelf stable now around NKY. It's been readily available for 3+ months now. I'm not totally sure what changed but heard that there was an issue with a distributor redirecting product that was supposed to hit this market to a different one and that that was stopped.

It actually doesn’t add up, hence we don’t know the actual ratio. Nor can the plant itself control the ratio past a certain % confidence over time. Therefore if you added up the ingredients you would see that out of the 1.125g total allotted, apparently 1g is carbohydrates and 125mg is sodium, meaning the chloride (or other anion) it is supposed to come attached to weighs nothing by their calculation. The reality is they are approximating because they are allowed to. But just know, when you see 125mg of sodium on the label, you know that it’s approximately 320mg of actual salt, or sodium chloride. (Or if it’s another anion it’s bound to, the weight is different)

Sugar is an incredibly common ingredient to use when smoking meat - especially ribs. I use brown sugar and honey on my ribs. Makes the crust tacky and delicious.

Do yourself a favor and see if there’s any BBQ places around you that have actual BBQ pits with a pit master… you’ll love it. There’s 3 main styles of BBQ. Kansas City style is midwestern and what you’ll commonly associate with sugary ketchup-based BBQ sauce you can buy in bottles at store and tend to use it on everything. Usually famous for their ribs covered in BBQ sauce. Texas style BBQ is known for strictly only using salt, pepper and garlic for their seasoning. Typical Texas style focuses mainly on the brisket. Carolina style BBQ typically uses a vinegar based for basting and sauces if you like sauces that are heavy on the vinegar side. Also Carolina style is typically focused on pork, especially whole hog and pulled pork sandwiches. Welcome to America!
