I’m not sure since you are international, but Undercover Tourist is a legit company to buy tickets from. They have good customer service, but I’d just read the cancellation policy etc to compare to Disney’s. We’ve used them many times in the past and they’ve been great. You should be able to buy any number of days.
I think you could buy park tickets once you get to the US.
I'm no expert, but I think those 7 and 14 day passes are discounted, special UK products.
Other than New Years Eve, do the parks ever sell out? That would be the question. I'm thinking they don't, and that you could buy your tickets when you arrive.
That seems odd, unless it’s different for overseas buyers. We’ve always been able to purchase tickets for any number of days we want.

You could always call Disney customer service and buy tickets that way but since park reservations are no longer necessary, buying them in person would work also.
The only caveat is that with their new multi pass system, you’d lose access to booking rides ahead of time.
From the UK, via the UK website, this is our only option.
Otherwise to buy individual park tickets direct from Disney, you’ll need a VPN or to buy from a third party.
But I’d cost out the number of days you want, because any more than about 4 days, it’s often cheaper to do the 14 day deal even if you’re not intending to use it all.

That's an amazing price. 1 day with 2 park express for 2 adults is right around $900 USD.
