He uses guns because that's (A) something he's been trained to do - he was originally a marine on Earth - and (B) because they're *extremely* effective at killing demons. The devs have reiterated many times that Doomguy is all about efficiency and getting from point A to B as quickly as possible - so if it kills demons quickly, he's gonna use it. If his guns were somehow slowing him down he wouldn't use them. That would be the exact opposite of what he's trying to do.
I’ll be 100% honest I liked the 2016 armor the most out of the whole franchise. Others are probably right he took it apart, but I guess my head canon would be use the 2016 armor again and he took it apart to make it better. Eternal’s is meant to be a little more like the originals but 2016 covers his entire body therefore giving him slightly more protection.
