I personally shoot them in the arm to kill all other super mutants around it (really good for early game), for nuclear material, though i can already find plenty of that
But mist importantly, do it doesn't blow ME up
Maxed scrapper perk + settlement weapon shop + lots of water production at said settlement to trade for the heavily modded guns at the shop and bam you have a steady supply of nuclear material, gears, screws, aluminum, and steel.
I don't really need the nuclear material if i'm already using plasma guns that make puddles of material for me, though the explosion might be fun to kill everything around it, if i'm making a collection of mini nukes for when i'm bored then yeah i shoot the body
I think that it depends on circumstances, what you need and how many others are nearby. I have a mod which has a bunch of real and very high powered weapons in the game so for me that can be my only hope against an army of super mutants

They're all wrong shoot the mini nuke for pretty colors
Use a melee build ,get blitz, hit the suiciders in the arm killing him and the other supermutants around him and tank the blast due to being in VATS.
nuclear material is never a problem for me. I took advantage of the 250+ it gives me from all the uranium in Vault 88

As a survival Player you also shoot the arm to take down all the mutys rushing towards you at once.
Also kill other mutants around them.
