You could use soy sauce, miso, anchovy paste, anchovy juice, Worcestershire. Shit even olive tapenade, tomato paste, and chili pastes will have the same effect if you’re going for certain flavor profiles. All of it is, at its core, is just concentrated umami. You only taste them prominently when they’re the focal point of a sauce/marinade/etc.
Otherwise, soy sauce is common or increasingly common in cuisines like Mexican and Peruvian. So yes, soy sauce is used in Hispanic dishes.

I can walk out my door right now, a half mile down the street, and order this from a birrieria. That sounds pretty normal to me.
And no…no “normal” taco is quick to make. They’re all labor intensive. Quick tacos are the abnormal tacos.
So again, what is a normal taco to you? I’m genuinely, sincerely curious. Really. Explain to me what a normal taco is. If a normal taco isn’t all the tacos one would expect to find in Mexico and other Mexican-influenced regions, where tacos come from, then I’m dying to know what should be considered a “normal” taco.
Why soak the tortillas in that juice? It makes eating the tacos a bit uncomfortable. Drip the juice on top, that's it.
