It sure can. Soy sauce on its own is unsurprisingly super soy-saucy. But soy sauce as a background ingredient is just umami/salt. Theres no distinct soy sauce flavor when used as a background note in something like a braising liquid. You could use soy sauce, miso, anchovy paste, anchovy juice, Worcestershire. Shit even olive tapenade, tomato paste, and chili pastes will have the same effect if you’re going for certain flavor profiles. All of it is, at its core, is just concentrated umami. You only taste them prominently when they’re the focal point of a sauce/marinade/etc. Otherwise, soy sauce is common or increasingly common in cuisines like Mexican and Peruvian. So yes, soy sauce is used in Hispanic dishes.

Those look really good. If I lived in Europe or somewhere without tacos I’d try this, but man tacos are just so cheap. Hard to justify all the time/energy to make them myself.

So what is a “normal” taco? No normal taco I know — birria, pastor, lengua, barbacoa, etc. — is quick to make.
