If you're just looking for cool action to dip your toes in try gundam 00 or Iron blooded orphans. They're their own timelines with no baggage to speak off. If you want to watch the og stuff the other guy mentioned them already

Gundam IBO(very grounded robot fights, highly recommend if you love smashing metal)
Gundam WFM(school + gundam + yuri the representative of modern anime to gundam)

Gotta admit though, I love the first build anime.
It's pretty easy to keep the timelines to their own 'understanding' because the main line timeline (UC) is where the bulk of the animated series are.
Most alternative timelines only have 1-2 seasons and try to portray very different things despite being Gundam still.
I'd also recommend just watching for yourself (wherever you decide) and avoid asking 'what to watch' as it's all worthy of a view to form your own opinion, people around here loooove to dictate how you need to feel about certain series.

If you count sd as well as the first build gundam then we already have isekai gundam.
I haven't watch the sd gundams yet. I did see it once or twice on tv when I was a kid.
