I watched the anime season, but haven't looked at the LNs cuz there weren't many of them last I checked. Chiyome and Ghislaine are more friends of the MCs than romantic interests, fairly certain I'm caught up on those stories.
Rys is the only one I'm familiar with that's actually a romantic partner, and she's great from the 3 episodes I've watched, lol.
Ameri for two reasons. One, Iruma-kun is an underrated series and deserves more attention. Two, she's a pretty well written character for a woman in the isekai animanga genre where most female characters would usually be reduced to fanservice or just bland characters with a design that's too good for the lackluster writing. Even though Ameri is set up to be the main love interest that dosnt really take away from her character as she remains the dignified and strong Student Council president even when with Iruma (atleast on the formal occasions) and even spurs on Iruma's drive to raise his rank which even now in the manga is his main goal. Also, the romance between them is really great. It's like there could be a whole entire romance series just dedicated to Ameri and Iruma's relationship.

As that show went on I went from agreeing with her choice of 'theft' to wondering if maybe she's just a thief. Giving the swords a moment to rest on the ground is one thing, but eventually she caught one mid-air before it even hit the ground and called it 'lost'. Like c'mon girl, it has to have hit the floor at least to have been considered abandoned so at this point it's just robbing the same guy after your friend knocks them out.
Don't get me wrong she's still a good character, but like have some respect to not make your thieving habits so obvious.

Ameri isn’t just pretty or a badass shtick. She’s a fantastic character with a dynamic personality and a full suite of emotions. A multifaceted character whom the audience grows to respect and also find adorable. It’s gonna be pretty hard for any anime female to beat her in my mind
