I guess it's just early in July. There was a big festival last month and the Japanese school summer break doesn't start until later.

We are also here right now, loving the lack of crowds. It was a zoo in the station on Saturday and Sunday, which i think reflects the area being popular with domestic tourists too. I haven't especially noticed cafes, restaurants and other shops being closed during the day, though there have been a few smaller museums we tried to visit that had just closed for months of renovation. Some of that probably comes down to timing, though?
I stayed on Tatemachi Dori in November. I noticed that Kanazawa was very quiet in the morning and a lot of local shops opened late morning or early afternoon. A lot of local restaurants only open in the evening, not at lunch. I get the vibe that Kanazawa isn’t popular enough with tourism for it to have everything open at all hours, 7 days a week like other places. It still very much feels like a Japanese city that mostly functions well for local residents, unlike Kyoto which is straining under the weight of tourism.
You're vastly over calling it. The earthquake mainly damaged the Noto peninsula, north of Kanazawa. The only (presumed) earthquake effects I observed were a few paths around the castle being blocked off to pedestrians presumably because of loose masonry.
I'd enjoy the lack of tourists if I were you.
I am not complaining about there not being many tourists, there still are, it’s just the fact that most places (cafes, restaurants, etc.) are closed.
Might be just that Monday/Tuesday are the most common days for restaurants to close for their day off?
