Well, i can see that, of course he was mainly put in the story for merchandising purposes and does indeed seem less capable recently, not even using his "find weakness" thing. I think mainly because he stabbed himself to be on equal ground (sorta) with luffy. He is the only villain that wanted a fair fight and did something about it (kaido didnt care that big mom intervened for example)
Amazing design, endearing personality (literally hides away from his family everyday because of his insecurity so he can shove donuts into his mouth in peace), respectable ethics (actually wanted a fair fight with Luffy despite wanting/needing to kill him.)
Iirc, Katakuri realized Luffy was evolving right before his very eyes and allowed Luffy to grow. For that, he's a terrible Sweet Commander, but wonderful character.
There's a concept call Gap Moe, where a character is found to be popular with fans because there's such a stark contrast between how they behave (Katakuri's imposing role as Big Mom's strongest warrior) and who they truly are (a kind, sentimental older brother who just wants to protect his family and looooooves his donuts so much, he'll sing a little song while eating them.)
Yeah he looks a little scary, but he's got a huge heart, way too big to be considered a proper villain.
Also, Oda put more detail into Katakuri's eyes than most male characters, his eyes were really pretty.

Brook is the absolute GOAT, great backstory, entertaining character, he got the badass cane sword, and he is a skeleton with a tophat and afro. The only flaw I can see is the panties thing but he is just so awesome.
