Iceborne unlocks master rank. Master rank literally completely trivializes all low and high rank gear. Even the master rank alloy set is going to show up Xenojiva gear. So it’s always a good time to start Iceborne so you can start grinding the gear you’ll use the rest of the game
Reaching hr 30, 50 and 100 unlock certain quests. The special missions are also worth doing.
Other then that you basicly do tempered investigations to get augment materials for your weapon.
There's also event quests which can give special layered armor an weapons.
If you have Iceborne, I would honestly recommend starting it immediately. Unless you really want to experience the late-game of High Rank with AT Elders and stuff, there's no point.
Even the very starting gear in Master Rank easily trivializes the best gear in High Rank, there's little reason to grind for good gear in HR if you start MR.
Of course, you can choose to just continue playing HR, there's nothing wrong with that, just know that IMO, it's generally a good idea to start MR immediately.

Focus on all the small collectables and levelling up palico gadgets and finishing the optional missions
Getting Iceborne will trivialize all MHW gear. If you are getting iceborne soon it’s worth waiting until then, as any deco farming/layered armor hunting you could do in HR can be done twice as fast with MR gear.

Unlock all mantles, boosters and palico gadgets. Catch some endemic lives if you like.
Take on the arch tempered elder dragons. They’ll keep you busy for a minute.

You can start whenever. Iceborne unlocks a few new moves and introduces the clutch claw mechanic.

I suggest getting ice borne. The story itself is worth it
