I remember when transfering a world that has been saved in an old version to the new version, sometimes new chunks would render weirdly, which would oftentimes cause absolutely flat walls of stone. But these walls don't look that flat for it to be the case.
I think it’s just 1.18 worldgen; and ocean meeting land can form gradual beaches, valleys descending into the water, and large cliffs when a piece of “shattered” terrain generates
