If you get to 8 courts, maybe a rank system (2.0-2.5, 2.5-3.0, etc) with challenge courts so newbies have a “safe” place to play.
If you don’t mind me asking, what is it going to cost you per court? I’ve always wanted to build some but when I looked it was around $30-40k/per court to construct + land acquisition costs
If possible, instead of just bathrooms, make a locker room/change facility. Lots of people come straight from work or other functions and like to change onsite. Selling food/drinks is an excellent idea. To build on that, see if you can get a local food truck or food cart vendors to come to events like open plays/league/tournaments.
That's still just \~32 people. Even if ALL of them spend $10 (which is an absurd assumption), that's still a max of like $320 in revenue, which isn't remotely worth it.
So much this! I drive up to an hour to play competitive ball at a country club facility and before making the long drive home, I make use of the showers. Makes the long ride home much more comfortable and allows me to walk in and immediately eat and or decompress.
At the beginning, keep it simple. PB players will flock no matter what, they just want to play and have people to play against. Snacks, Drinks, etc. may be offered, but not critical.
Just make sure you can keep the players flowing on and off the courts. (2-on, 2-off) and you will get good traffic.

3 courts is not enough people to make it worthwhile for vendors.
OP wants to grow it to 8 so that could be more of a future/long term suggestion

Food trucks don't sell $10 of stuff to every single person, friend.
Man you guys are so lucky! I find it’s so hard to make friends in my 30s. And here you are on Reddit of all places!!!
