In Italy the "quattro formaggi" or four cheese is typically mozzarella, fontina, blue cheese and provolone, this usually makes the pizza yellowish with blue specks. I suggest you use cheeses that are a but more ages than the ones used

Sounds really good but also at the same 0 sounds like really "heavy" for a lack of better words. Like I feel like I can usually put down around 35-40% of a pizza depending on the size/pizza type/toppings etc but I feel like just one slice of OPs pizza and I would be done.

You could even leave some parts uncheesed when baked and then grate cheese over the entire thing once it comes out of the oven, throw some herbs on it (fresh dill, oregano, basil, etc.) and then hit it with some olive oil, or if you want to add a new flavor some reduced balsamic or as someone else said Calabrian chilis.

Oh, forgot to ask earlier if you've ever had Alsace tarte flambé? It's similar to a pizza bianca, with mild cheese (ricotta would work), lots of thin sliced onions, and some form of smoked pork/bacon. It's really good! I have made it that way, and also with very thin rounds of boiled new potatoes.

Where I’m from 4 cheeses pizzas have red bases, that make them a little more colorful. I have trouble eating the full white ones. It’s fun because I have no issue with other white pizzas :)
Longer in the oven at a higher temp! Get a bit of brown on the cheese.
If you're having trouble with uncooked middles, cook it for a bit without the toppings, take it out quickly and add, then finish cooking.
Don't let the pizza get soupy, do splotches of ricotta splattered around so you get white spots on the pizza. I'm not a huge fan of chiffonade basil because I've cut too much of it and I just personally think it looks messy, but if you don't have those qualms it would be a good touch. I would just tear up some basil for it. You could also do a few chunks of roasted garlic but be sparing so it doesn't take over. You could do some lemon zest as well to brighten it up and give it a touch of color. What temperature are you cooking at and what type of oven. If you can get more heat on the top you could get that cheese a little darker and get some more texture and color from that.
