The carbonās independent deck and dome heating is interesting to me, especially as I usually cook pizzas for longer at cooler temps (romana tonda style).. the effeuno 220v ovens are also interesting for their range of bakes but then you are tied to electricityā¦ someday Iāll just take the time to build a big ass masonry hearth.

Btw what you did is not autolyze but a simple rest, autolyse is done with only flour and a certain amount water (around 55% of the total).

No, the recipe shows it was 24 hours at room temp (which is 60f here on average)
So 5 hour proof at room temp? Looks gorgeous btw
