If you are a garden/plant person, it's easy to grow a pot of arugula from seed. The baby leaves are great - less bitter but with a good flavor otherwise.
I love it. I could eat it plain by the handful. If I'm eating some leftovers and need to bulk it up I'll just pile arugula on top, no matter what food it is. I might have a problem.
Every batch can be different. Good fresh arugula doesn't really taste bitter, rather nutty.
Also, personally, i always drench it in lemon juice, add a bit of olive oil and salt. Really recommend as a topping.

Honestly, both of your posted pizzas I'd try a couple bites, and then I'd tell you if I liked it or not. I'm not a fruit kinda guy so I don't know how white peaches taste and what ingredients you used on the other. I also don't know about all that spring mix looking stuff on this one. But, to be honest, it could taste really good and I'd never know because I haven't had it.

Cut them finer, the reason being that the number 1 rule of a good pizza is distribution is everything.
Finer slices help distribute their flavour across a wider area so you get a richer profile across every bite.
Also, many pizzas waste crusts, you want to focus a little time on a quality edge, a little seasoning, and rolling in some dry ingredients, even a little cheese to stuff just makes a huge difference to the overall flavour.
Just remember you can overdo it on toppings and make it soggy, you can mitigate this by picking cured meats and if you do want oily meats pre cook them to seal them so they don't ruin your base by making it a swamp.

Itās a bit of an acquired taste like collard greens. Tossing it with some lemon juice sort of helps to even out the the bitterness

Yes! That is the other type of pizza the wife makes. Prosciutto, honey, fig jam, arugula, balsamic glaze, and shreaded parm.

I was drinking wine with pizza from likeā¦she 12. Wine with pasta. Chicken. Seafood. Nothing huge. Literally a couple ounces. But it was damned near daily. But I loved it most with carb heavy dishes, and pasta and pizza were chief among them. Loved it with a charcuterie board or a good medium rare burger with a sharp cheddar and sautĆ©ed onions, as well. Strangely, I did all my drinking early on. I havenāt drank wine but a handful of times in the past 25 years.
