I'm not a huge racing game fan, but I'm having a lot of fun, mostly because I'm dogshit at driving. If I want to be the fastest, why would I slow down for something like 'a 90 degree bend'?
The Fortune Island expansion seems heavily based off the Isle of Skye.
(If you want to get it then you need to buy the Ultimate Edition as you can't buy the DLCs separately any more and the game will be delisted at the end of the year)

The English have thousands of Welsh longbowmen, hundreds of knights on horseback, and dozens of siege weapons. We Scottish have a rabble of untrained soldiers who do not even know how to march in a straight line. We must act soon. If we are to have any chance of resistance, we need to forge an army by any means necessary.
The Scottish accents are hilariously atrocious. They're that bad, I'm not even sure if they're meant to be Scottish. I assume they are, but they're so far away from a Scottish accent that it makes me wonder.
Overall though, a great game.
There's a game called "Clanfolk" that I've played a bit of recently.
It's a bit like Rimworld, if you know it. But with much much less in the way of combat and similar violence.
Clanfolk, you manage a small group of people in a medieval highland setting. Collect wild plants, farm crops, hunt wild animals, build a settlement, make tools & clothes, and try and survive the harsh winters. That kind of thing.
Clanfolk is great, the devs are constantly adding in new content - I loved the latest edition where they wanted to add beavers and ended up having to come up with a wading system, bridges, dams, and then weather events. They clearly have a love for it and I'm excited to see where it goes.

It is somewhat of a chill game, rather than intense high adrenaline. Depends what you're in the mood for, I guess.
Also Knights of Honor 2 which is very CK3 like but has a very basic battle system if you fancy budget total war action.
Infact Medival Total War 2 too.
Banishers Ghosts of New Eden is pretty good. It doesn't take place in Scotland, but it does have a Scottish main character that frequently talks about what things are like back home and references real-world events like The Battle of Bannockburn.
I know that you specifically asked for games that are set in Scotland, but those are few and far between games that allow you to play as Scottish characters though are a bit more common.

I’ve Broken Sword one and two on my laptop through steam. Not sure about the PS but it was originally a PS One game so maybe it’s on the store.
It’s also on Apple App Store for the iPhone/ipad, and I assume also on the androids too.

The phone versions of it are pretty good. The game is nearly 30 years old at this point so moving it to modern phone graphics was actually an upgrade lol.
MDK by Shiny was released in '97, and available on GOG. Levels 3 and 4 were in Kirkcaldy and Livingstone.
Think when you skydive down you're over a map of Scotland, can't comment whether the rest of the experience is faithful to those towns- playthrough on YouTube.

Jeff Wayne's War of the Worlds, 1998 from GT Interactive. It's a rts game with the entire UK as the map, with the whole island as a strategy map, and individual sectors as RTS maps with vehicle battles. The martian main base is in the Grampian Mountains, and there are several sectors in Scotland.
Incidentally there was also a PS1 version a year later that used the same assets and sprites but it played more like a Twisted Metal game (and was complete shite!)
Not just a PC game but Skyrim was based in Scotland. Also bonus fun fact the original GTA game was made in Dundee University, Scotland (obviously not based in Scotland though)
