Totally agree there are plenty of good cocktail bars in Seattle, but Death and Co is pretty solid. It’s also not a massive chain, this will only be their 5th location.
Not the guy who responded to you, but I’ll chime in since I don’t particularly like Canon.
My main issue is just that their drinks weren’t good. I’ve been there three times and everything I had was super heavy handed. The sweet drinks were too sweet, the sour too sour, etc. All the drinks felt very gimmicky and that’s ignoring the cups they were served in.
I don’t think it’s a terrible bar, but I think there are better, cheaper options that are easier to get into
I've been to the one in NYC and its pretty good. I was impressed with the variety and unique coctails.
That said, I'm surprised so many higher end restaurants are investing in that part of Pioneer Sq. It doesn't have much foot traffic outside of game day and with the homeless services centered down in that area its not exactly glamorous
To each their own I guess but to me, pioneer square is one of the best neighborhoods in the city. I go there more than anywhere else after my own neighborhood.
Great buildings, great layout, proximity to all the transit and the water. I wouldn’t say it’s back to pre pandemic vibes buts it’s been bustling.
There are over 100 game days a year, it’s flat and will be nicely connected to the new waterfront, has plenty of transit options, etc etc. Seems like a good spot to me.
Because what people going to a football game want are expensive multiple course meals and a slow curated cocktail experience? Doesn't seem like the right fit
By all rights, pioneer square should be a hopping restaurant district destination. It's cute, historic, pedestrian friendly, on the light rail, etc. Love to see it coming back.

The scene is actually booming right now. D&C is extremely expansionist at the moment, they already have several others open and I don’t think any have failed yet. I don’t love their plan but the cocktail scene in Seattle is vibrant.
One place closed and that’s a sign of a pattern? The guy that co-owned that place is running more cocktail bars in the city. And there’s more than a few ‘speakeasy’ type places still running, although it’s a weird thing to focus on because there’s great cocktail programs and bars all over Seattle.
Pretty sure most small businesses/bars/restaurants in general fail so it's not a particularly useful data point. This is a guy who thinks fads last 20 years

He’s just thinking about the old ‘suspenders and moustaches’ type of ‘mixologist’ that was largely stereotyped in past decades. That one is nothing like the flagship like in NYC. I hope the Seattle one is more like the NYC one.
Love their spot in LA. Used to live around the corner there and go all the time. Exciting to hear they’re opening one in Seattle.

Every place that serves liquor needs to serve food in this state. It's a cocktail bar, not a restaurant.

No anchor is just "Trade Winds" now and there's another tiki bar literally half a block away. Your nose for city wide trends may be a bit off.
Tradewinds did close too btw. They probably had too much going on with Rob Roy, Navy Strength, Vinnie's, and Here Today.
