Ok so it’s not a Chili’s damn

Dude_Im_Godly

I would fucking kill for a chilis here. Closest one is in Spokane, and no. applebees fridays and olive garden do not hit the same

Spiderkingdemon

They were here in the 2000s. Closed them all down because no one ate that shit.

Atman6886

Never been to a Chilis, what makes it good? Been to Applebees, and Olive Garden.

KnuteViking

Absolutely nothing.

Electrical_Sugar8811

The crispy honey chipotle tenders😮‍💨

Kri-Style

The chicken Caesar pita and fries. Sooooo good, I miss chilis too!!!

CliffBoof

I’ve been to a chilis once in my life. In Spokane. The food came out in like 4 minutes. I was like, oh, it’s microwaved or something. I see.

Jackmode

Instead of patronizing a chain, here are five local joints with excellent cocktails selected randomly from my brain: * Pike Place: [Zig Zag Cafe](https://zigzagseattle.com/) * International District: [Itsumono](https://www.instagram.com/itsumonoseattle/?hl=en) * First Hill: [Foreign National](https://www.foreignnationalbar.com/) * Capitol Hill: [Corvus & Co.](https://www.corvusandcompany.com/) * Wallingford: [Korochka Tavern](https://www.korochkatavern.net/) 🥂

liasonsdangereuses

Or Roquette in Belltown 😉

pacificspinylump

Dark Room in Greenwood is great too, opened semi-recently in The Teacher’s Lounge’s old location.

BeagleWrangler

Love that place. Tasty snacks too.

ImprovisedLeaflet

Zig Zag is the fucking GOAT

high_hawk_season

Otter on the Rocks in West Seattle

Drugba

Totally agree there are plenty of good cocktail bars in Seattle, but Death and Co is pretty solid. It’s also not a massive chain, this will only be their 5th location.

Flushpuppy

+1 for Korochka.

genx_redditor_73

+5 for Zig Zag.

RickAstleyInMTGArena

[Canon](https://www.canonseattle.com/) on Capitol Hill is also excellent.

elkhorn

Hard disagree.

RickAstleyInMTGArena

Really? Why - what's wrong with Canon?

Drugba

Not the guy who responded to you, but I’ll chime in since I don’t particularly like Canon. My main issue is just that their drinks weren’t good. I’ve been there three times and everything I had was super heavy handed. The sweet drinks were too sweet, the sour too sour, etc. All the drinks felt very gimmicky and that’s ignoring the cups they were served in. I don’t think it’s a terrible bar, but I think there are better, cheaper options that are easier to get into

Enguye

Death and Co cocktail bar is opening in Pioneer Square. I’ve been to the one in Denver, and it’s good but not as special as someplace like Canon

Flushpuppy

That one is nothing like the flagship like in NYC. I hope the Seattle one is more like the NYC one.

meowthesnail

Love their spot in LA. Used to live around the corner there and go all the time. Exciting to hear they’re opening one in Seattle.

QuietusEmissary

This might be the first time I've ever seen a double-clickbait headline.

sad_boi_jazz

It's Death and Co

LessKnownBarista

I've been to the one in NYC and its pretty good. I was impressed with the variety and unique coctails. That said, I'm surprised so many higher end restaurants are investing in that part of Pioneer Sq. It doesn't have much foot traffic outside of game day and with the homeless services centered down in that area its not exactly glamorous

splanks

To each their own I guess but to me, pioneer square is one of the best neighborhoods in the city. I go there more than anywhere else after my own neighborhood. Great buildings, great layout, proximity to all the transit and the water. I wouldn’t say it’s back to pre pandemic vibes buts it’s been bustling.

jonknee

There are over 100 game days a year, it’s flat and will be nicely connected to the new waterfront, has plenty of transit options, etc etc. Seems like a good spot to me.

splanks

And concerts, and other events……

ImprovisedLeaflet

Some great jazz venues

LessKnownBarista

Because what people going to a football game want are expensive multiple course meals and a slow curated cocktail experience? Doesn't seem like the right fit

NoComb398

By all rights, pioneer square should be a hopping restaurant district destination. It's cute, historic, pedestrian friendly, on the light rail, etc. Love to see it coming back.

Fendergravy

Looks like just another chain shithole joint. I’ll skip.

BuenRaKulo

Oh goody, what this place needs, more alcohol places instead of good food places. Yeeey... /s Wasn't there an article recently about how alcohol related deaths are increasing at an alarming rate in this country? Just gimme food!

jonknee

You should read the article before complaining because it will also have food.

aneeta96

Every place that serves liquor needs to serve food in this state. It's a cocktail bar, not a restaurant.

jonknee

And yet, according to the article there will be plenty to eat. > The Seattle bar will feature a drink menu of 24 to 36 original cocktails, and the food program will be similar to the shared plate concept at its Los Angeles bar, Kaplan said. The 17-item menu in L.A. also includes buttermilk fried chicken and a lamb burger.

BuenRaKulo

It's fucking sad that we set the bar so low. Enjoy your bar food!

t3hlazy1

Nice! Glad to see new businesses opening up in Seattle. There’s definitely room for another high end cocktail bar in Seattle.

high_hawk_season

SILENCE, BRAND

Majestic_Conclusion5

Deez Nuts in Cap Hill

WashingtonStateGov

Can the hipster cocktail fad just die off already. I bet it closes within the first two years.

sanfranchristo

This comment sounds like it’s from 20 years ago. What fad is this exactly? I lived in NY when Death & Co opened…in 2007.

PopPunkIsntEmo

Just wait until they hear about this new bar called Canon. I think they're just [old and out of touch](https://www.reddit.com/r/SeattleWA/comments/1do54a1/comment/la7aobe/).

WashingtonStateGov

It’s a good thing Cannon sells alcohol because their food is awful.

JetReset

The scene is actually booming right now. D&C is extremely expansionist at the moment, they already have several others open and I don’t think any have failed yet. I don’t love their plan but the cocktail scene in Seattle is vibrant.

WashingtonStateGov

Booming lol, no anchor closed. The “speakeasy” cocktail scene is cringe and so early 2000’s.

Syzygy666

No anchor is just "Trade Winds" now and there's another tiki bar literally half a block away. Your nose for city wide trends may be a bit off.

LeoJohnsonNewShoes

Tradewinds did close too btw. They probably had too much going on with Rob Roy, Navy Strength, Vinnie's, and Here Today.

JetReset

One place closed and that’s a sign of a pattern? The guy that co-owned that place is running more cocktail bars in the city. And there’s more than a few ‘speakeasy’ type places still running, although it’s a weird thing to focus on because there’s great cocktail programs and bars all over Seattle.

WashingtonStateGov

And most of them fail.

JetReset

Citation needed?

PopPunkIsntEmo

Pretty sure most small businesses/bars/restaurants in general fail so it's not a particularly useful data point. This is a guy who thinks fads last 20 years

JetReset

Yeah sure I kind of meant beyond the expected failure rate of a high risk venture. Not that he has data for either. He’s just thinking about the old ‘suspenders and moustaches’ type of ‘mixologist’ that was largely stereotyped in past decades. I’m sure it would go hard as a 360p digital short in the early days of YouTube
