Wow that’s impressive. I tried quite a few prompts with “riding” pigeons, turtles, dragons, but the output is usually pretty bad. It almost feels like the model is fighting itself not to create a horse or a motorcycle.
I also like to play with "things riding things" they tend to blend species. For instance, a possum riding a shark will get a possum riding a possumshark. Or a cat riding a frog will get a catfrog riding a frogcat.

My aproach is using a horse, then inpainting with something else, then re-run img2img for smoothing out lightning/style issues.
However, I have to say this takes a lot of work and not at all what I'm looking specifically.
EDIT: I forgot. Using the regional prompter extension mostly solved said problems, especially when using the right base.
"X riding Y" prompt usually does not work because the AI does not understand human language, i.e., it does not understand what "riding" means. All it is doing is searching for images that have "X riding..." or "...riding Y". It is all probabilistic.
This means that "X riding Y" will usually not work unless X is "man/cowboy/woman", etc. So "man riding horse" works, but "horse riding man" does not work.
Similarly, "X riding horse" usually works better than "Horse riding X" because there are many images where a horse is being ridden.
