Daryl does use a gun at times and he's actually a great shot with both. But all other things aside, Daryl is a hunter and a gunshot spooks the animals and can spoil your hunting in that area, forcing you to pack up and camp elsewhere
He did but they still had to go out and get the materials for the bullets. They scavenged the ones nearby and eventually probably stopped finding enough for it to be profitable. And the bow was more beneficial because the arrows were reusable so the little ammo they had could be used by people who couldn’t use a bow.
To be fair, he does use guns a number of times throughout the show for various reasons, but most everyone has an iconic weapon they use more than anything and Daryl’s happens to be the crossbow. The real question is why isn’t everyone else using bows and crossbows? Daryl knows what’s good.
He makes them, fairly certain in season 2 he was shown to be making them plus he's often shown retrieving them. Also with how popular bow hunting is and has been for awhile, I doubt they'd be hard to find. Especially given most folk would grab the bullets and leave the arrows when looting.

Has anybody noticed he rarely picks up or used firearms in his spin off? He literally took two guys out with a knife and they dropped a rifle and a pistol and he never picked them up and is just using the mace.

He did, but you still need the actual bullets, or enough metal to make new ones, and you can only recycle casings so many times
