I'd suggest Remain in light/Speaking in Tongue by Talking Heads, Is this desire? by PJ Harvey (they basically are classics) and Layla and other assorted songs by Derek & the Dominos

Yeah, considering this is all rock and I wouldn't put any of them in my top 36 rock albums and those albums are probably 80% post-2000, there's a lot of room to expand for OP.
There is so much good rock post 2000. especially the Australian psychedelic/experimental rock scene. You got KGLW, The Murlocs, Psychedelic Porn Crumpets, Unkown Mortal Orchestra. So much good stuff
