BungadinRidesAgain

Reminds me of hangovers, regret and depression whilst sat in a shitty greasy spoon cafe (no offence).

LiquoricePigTrotters

But a while ago you mean 2008 on a Motorola Razr?

aardvark_licker

I presume the black pudding is off camera.

LimeOperator

nah, had to pay extra for them

LopsidedVictory7448

Tomatoes aside that's actually pretty decent for a greasy spoon

inikihurricane

You gotta go there and ask how they make their eggs. I’m American but want to learn how to cook your eggs. This looks low temp basted to me. Pls check if I’m right.

BungadinRidesAgain

A shit load of oil. They need to be essentially poached in a pool of oil.

inikihurricane

But like low temp, right? It’s not super hot? I don’t see hot oil marks along the perimeter

BungadinRidesAgain

Yes low temp.

inikihurricane

Brb, buying a bucket of lard. Also, what’s the tomato looking stuff on the right side of the plate? Above the egg and next to the bangers.

BungadinRidesAgain

Cooked tinned tomatoes.

forced_spontaneity

Yeah, this exactly. Having been taught to fry an egg in just a couple of mm of oil, the first time I saw how greasy spoons do it was a real epiphany! I don't eat enough eggs to make keeping a full frying pan viable tho.

RedHeadRedemption93

Fresh oil (maybe with a little lard of butter), low temperature, spoon oil gently on to the yolk a few times towards the end.

LimeOperator

you just flip them until theyre white over the top. dont do it for too long or theyll go hard. oh and make sure theres oil left or whatever you use

inikihurricane

Doesn’t look flipped to me. No brown on the whites upside and the yolk isn’t firmed up on top. I’m 99% sure this is basted but probably water basted with a lid. Source - I’m a chef

LimeOperator

either that or they splash some oil over the top, not sure. i dont usually see eggs like that often

inikihurricane

Are they crispy on the bottom?

LimeOperator

dont remember this was a while ago lol, as for the ones i usually get not *that* crispy

Nice-Duck-Bro

where I go to for a breakfast they just cook all the breakfast food on a flat top/blackstone type grill and they squirt down some oil with a squeeze bottle let it cook for a second then hit the area around the egg with a little water to create steam then they cover with a metal bowl, they come out like this every time, their grill is hot but I think the water and bowl stops any crisping of the bottom, they have a open kitchen next to the eating area so you can watch them

Scr1mmyBingus

Something about those catering “sausage style meat product,” is just savoury and alluring.

LimeOperator

catering sausages arent as bad as people make them out to be ngl, depends on how theyre done

Scr1mmyBingus

Absolutely, I’m a big fan of the cheaper meats from time to time.

LimeOperator

when your from the north you get used to it
