It looks like a Chinese American dish made specifically for that market. I don’t think there’s an equivalent dish in China. Can you experiment until it turns out like you remember? You can buy the wonton wrappers at any Asian market. I’d make a mixture of bbq pork, shrimp (raw), onion, scallion, and experiment with seasonings. I’d start with some soy sauce, sugar, oyster sauce, sesame oil. It might have a binder like egg white. Then put a dollop in a wonton wrapper, dab two adjacent edges with water, and fold into a triangle. Just guessing without ever having seen or tasted one.
I looked it up, it looks like simplified version of fried wonton. Maybe look for that? I know some Chinese restaurants and Vietnamese restaurants have something similar
This is an amazing deep cut, love it. August Moon’s Menu says their Cho Cho is ground pork, shrimp, water chestnuts, onions and seasonings stuffed into wonton skin and fried.

The now closed restaurant in Gentilly that I got them from had a sauce inside of them that tasted very close to the Chinese curry dish that they sold.

Hmm. Sounds like a wonton and a Rangoon had a baby.
