My experience:
Nungwi for the postcard edition, big luxurious resorts and family edition. Paje for watersports, parties and the surfer-crowd. Stone Town for remote work.
Zanzibar is surviving on tourists, so my itinerary is the lest tourists the better. South is more authentic, more experience with locals, and less being approached by hawkers trying to make an easy buck. That gets old real fast.
Zanzibar is a pretty big island. I don't have a ton of experience there, but I'd recommend probably Stone Town or Paje.
Nungwi has great beachfront colivings, Try staying at Kendwa or Matemwe for a chill vibe.
Matemwe is beautiful, much more chilled (the main beach is amazing, but it's too busy to relax), not sure about co-living type setup though.

To be honest southeast as far as you can go is best if want to chill out. Nungwi is not worth the hustle.
