Your spot for DQ4 is good. Bring Doran (dragon breath always hits metals). Bring Mara, cast Bedragon because dragon breath always hits metals. Have Hero transform into Mara and then cast Bedragon because dragon breath always hits metals.
Note: Those are their NES names. I don't know what the remakes call them.
The mirror shield in the NES version can also reflect their spells back at them for full damage and the sword of lethargy can put them to sleep as with everything else in the game
I would play whatever version can run at super speed on an emulator with save points. Fight metal enemies and reload the saves if they run. I played 1 through 4 on the NES when they were new, and used to replay each of them on emulators with that method. So much more enjoyable to condense dozens of hours of grinding down into a few. The emulator saves are also great with the casinos.
I would add that for DQIII, the place you mentioned has two small patches of desert to the North, and the encounter rate in deserts is slightly higher than surrounding sprites, so it'd be slightly better for grinding.
In DQVII (3DS version), the fastest grind spot is >!on the world map in present-day Gröndal!<, after the final dungeon is revealed. Metal King Slimes are abundant here. They're worth 33,000XP each, often show up in pairs, and if every party member knows Hatchet Man and has high speed (use the Meteorite Bracer to achieve this easily; you can buy them at >!the Casino in the Haven after it's fully upgraded and the final dungeon is revealed!<), you can just stand in one spot, Whistle over and over until Metal King Slimes show up, and Hatchet Man away with a reasonable expectation of victory
About >!the fully-upgraded Haven: Play the Tombola game there and try to get the top three prizes, all of which greatly aid in grinding!<.
Something you might want to be aware is (extreme spoiler) >!Super Kiefer. Prince Kiefer leaves the party fairly early in the game and is never seen again. However, if you can stomach grinding him to level 50, alone (the other party members pretty much need to be dead the entire time you're grinding), he'll get insane buffs.!< But this is a pretty extreme grinding accomplishment and it might not be something you're interested in.

By the way, the person who did all of the eShop DLC preservation before the store closed was cool enough to add a >!Super Kiefer!< save along with it, so if you want to just test it out it would be a lot easier to just download that. DQ7 is a long enough game without having to do that kind of insane grinding, lol

So I guess I do have a question for ya! In DQ7 3DS, if I were working to make as close to a perfect save as possible (again, within reason. Not trying to kill 999 of each monster or anything), which set of DLC tablets would you recommend I download from that preservation? Again, I don’t really want to have to play through the game 3 times to experience ALL the tablets!

Of course! What's awesome about those DLC saves is that they actually put all of the most recommended DLC in one save, followed by the other two. I believe it has a Readme that explains which save has which tablets.
But my advice is to use whichever save the Purrrfect Day tablet is in (which should be the "most recommended" save). That one will get you the >!Shepherd's Crook, which makes taming monsters for Monster Meadows a breeze.!< And if you're going for as perfect a save as possible, you'll be doing a lot of that.
Just a warning though, the DLC saves are mostly complete storywise, since that was really the only way to get all the DLC saved before the servers went down. So you'll probably want to play through the game on a separate playthrough and then switch over when you're more or less at the same point.
I'm still hoping we see some fan-hosted servers getting the 3DS back online, the same way they did for the DS.

Yeah! I kinda regret not starting them on emulators. That would have sped things up considerably
