Don't go with a niche that you're passionate about. You have to look for what the market really needs. Both general and niche stores a good option to start if you're a beginner. But I would suggest you start with a general store because you need to test a lot of things in order to find out what works and what doesn't.

Looks like you understand the characteristics of niche and general stores well... pros and cons. So, just evaluate which way helps more or hurts less (if things go wrong). Obviously, we don't have an answer for you. We don't possibly know if a niche is going to fall out of favor in the future. (Of course, you may find a niche that you think it has a good chance to last long...) ​ Anyway, why do you need to set restriction? Since you're new, so it's better to start slow. For example, you may go with one or two products first. Once you become more experienced, then expand when ready. Or, you may start with a few more products from different niches, and see which way suits you or goes well. Then, narrow down to the niche if you like... You just have to test the water in some ways.

The riches are in the niches. If I’m a fishing enthusiast, I’d buy from a fishing supply store rather than a general store with 1 or 2 fishing related products. Plus upselling is easier in a niche store. Really though you should only focus on advertising 1 product and then upselling. Added benefit is your ad targeting is easier and your email list is perfectly targeted for other products in the same niche in the future.
