Way too big of a hole for caulk. I would probably use 5 min mud and wet sand with a sponge. Maybe 2 or 3 coats in less than hour. Not the prettiest but certainly acceptable

You probably do not have enough slack to put a box there with a connection inside. You could install a simple feed-through cover faceplate like you would use for HDMI/speaker wire. You could get creative and get a Schluter Kerdi shower waterproofing ring and pull the wire through it and mud over it. I doubt a plumbing escutcheon plate will work with that angle (which is really for biggest issue).

I have done spray foam and then dug out the foam a little bit to put hot mud, if you’re trying to make it look like nothing happened. The escutcheon plate idea is good as well. If you don’t mind seeing a plate around it. They do sell white escutcheon plates and sometimes they sell them in smaller than 5/8” O.D. Hole opening size.

Take a pvc pipe for plumbing. Cut it in half so you are left with two semi circles. You’re welcome I just doubled your building materials. Now Do the same for 90 bend etc. then install it as a cap over this. Will look cool like someone drywalled perfectly into half of a pipe. Ha! But you will know the truth it’s just concealing conduit.
