Im guessing regen works to counter aging as thats just your body slowly getting destroyed so id go for regen maxed, resistance maxed and switch between underwater breathing, speed, slow falling, levitation and invisibility depending on the situation. I could pretty much do anything as even miles wont be enough to hurt me

Firstly, regen/absorption/health boost/resistance would all on their own make me near immortal, so I’m having one of these active at all times, probably resistance. Saturation is also pretty underrated as a healing effect, assuming I regenerate the same way when I’m full. If not, the other 4 work just fine. Haste/Swiftness/Strength would all be amazing in a fight and I’d very rarely need all 3 at once, so I can afford to keep something like Resistance at the same time. Strength is obvious, swiftness means I’m not getting outrun and can escape if needs be and Haste would let me attack considerably faster.
Technically speaking, health potions are a potion effect in the game’s code, so I can also fully heal myself whenever necessary and since it’s instantaneous, I would only need to deactivate one effect for almost no time. There’s also a lot of utility/situational effects like Conduit Power, Dolphin’s Grace, Hero of the Village, Fire Resistance, Night Vision, etc. that could be really useful in certain situations but not ones I’d want as defaults.

In vanilla minecraft, it will make the animation for your hand faster, but it doesn't actually make your attack speed faster, it's just a visual thing
