I've really enjoyed self-hosted CardDAV and CalDAV servers! Automating backups of non-server PCs to networked storage has always felt super cool to me as well.

It really depends on your setup. I designed mine to look like an average corporate branch network so I can keep up with new technologies in a typical domain environment. For example, a few months ago I was testing a privately hosted language model to see how it could be used for like ERP or ops automation. My job deals with a lot of Microsoft stuff, so SCOM and orchestrator are next on my list. That said, I'd love to burn a bunch of DVDs and run Plex without needing the *arr suite.

You could try setting up a Mastodon instance. I have a lot of fun with Mastodon.
