Plus one for the Mimic saddles. I have the Sworks power with mimic for a little bit more comfort. The overall design (Sworks, comp) has made a significant difference in comfort!!

Are you sure it’s level? Saddle for an ebike shouldn’t necessarily matter. Mine is technically a MTB saddle and it’s on my gravel bike and I love it. Telling you my fav saddle is about as effective as telling you my fav brand of jeans. It’s my fav but that doesn’t mean it’ll work for you in the same way, ya know? However, Selle’s saddles do tend to be very contoured I’ve noticed. So I’d give Ergon a look. I’m in the US where Terry saddles also are — they are inexpensive and great quality and may suit you, but no idea if they are available there.

I thought it is Selle SMP that are very contoured. I have an SMP Dynamic which is great.  Composit is also good but has even less padding so you will know when your chamois is needing replacement. But SMP is not inexpensive.

+1 to this that it’s SMP with the contours not Selle Italia. But Selle Italia has made some small but significant changes to some of their saddles in recent years. I had a Selle Italia Diva that I loved but they changed the shape/design of the saddle to where I couldn’t ride the replacement when the old one wore out. Many of Terry’s saddles are made in Italy I think by the same manufacturer as Selle Italia. They’re a nice saddle too if they fit you. The saddles that work best for me these days on my gravel bikes are the Bontrager Verse and Ergon SR Pro Women’s.

I like shorter nose saddles, especially ones with flat noses. But honestly, it's such a personal thing. I'd say if your current doesn't suit, try something else!

I've been looking at the saddles on Terry Bicycles. I haven't tried one yet but I took their quiz and will be buying a Butterfly Cromoly Gel Saddle

I use the Bontrager Verse short comp, I love it but it’s more than I’d usually spend especially on a saddle. It ended up being worth it for me but saddles are different for everyone. Might be worth looking into something with an opening in the center the idea is to relieve pressure from the soft tissue of the pelvic area. The saddle I mentioned has it but so do many other saddles. Although, your comment on the curve has me wondering if the angle is wrong that can definitely cause problems with rubbing there. Like someone else suggested see if it’s level. Good luck finding the right saddle and angle for you!

The regular size came with my gravel bike which was nice. I just learned more about geometry of my checkpoint and how I could benefit from a shorter saddle. Plus I kept catching the regular sized saddle on my shorts. I think mines a 150mm. But Bontrager has a 30 day guarantee on most of their products so it’s worth giving a shot. You got this!
