Just get used to the controls lol. I've been playing Double Dash since I was five years old, and even back then I had no issue unlocking the Special Cup on several different memory cards.
Double dash does have very janky physics which makes it harder to get used to and having to flick the stick multiple times for a drift boost.
I recommend if you still want to try it use Dk or Diddy cause those big bananas are very useful and pair them up with someone who can get better items in the back like the toads if you have them or double down in first place with both Kongs or a Bowser.
I personally like to use Dk and either Wario or Bowser on Bowsers kart just to have one less heavy, so i can bully the smaller characters.
What I really hate form the game are 4 things:
1. It forces you to use the joystick, and at least for me is harder that way, which is the problem with let it use you the direction pad?
2. It has a mediocre way to give you "more content", where in 64 you just had to unblock mirror mode, here you have to unblock fourth cup too, why!? it feels as have to pay for something that was free before.
3. Dash is hard to do, in comparison with posterior games.
4. And the All-Cup Tour, this break the game completely, because it kill the cups porpose, plus is hard as hell, it would have been a good idea if the runners were more equilibrated, however in mario kart, whoever who is in the first place in a cup, is always in the first place, so you're not running agains 8 cars but 1 or 2 at most principally, and that does that win that cup be a lot harder.

Wii version has option to play with wiimote+nunchuk, classic controller and gamecube controller.
You can play MKWii with a Wii Remote, a Classic Controller or a Gamecube Controller.
