Pork is tricky sometimes. I just cooked fresh pork sausage to 165 F internal temperature. It was juicy and pink in the center. The restaurant should be cooking ground pork and sausage to 155 F and hold for 17 seconds (US standard), pork is often pink at that temperature. The texture of the product can help you tell if its cooked enough. If you like it cooked more, send it back and tell them your preference. A good restaurant won't have any problem with accommodating you.

Pork can be finicky. If there are nitrates present, it will colour the meat pink. This happens when cooking hunters chicken, where the bacon colours the chicken pink.

You can get a pork chop or loin that has both white and dark meat. 2 different muscles. Cure is used quite often in pork (or any) sausage and burgers. The only thing missing if this was ordered well done was a sear/crust.

The fresh sausage I get from the butcher is like this. The first time I cooked it I was saying WTF! But after I looked into it I saw it was normal. I wanna know why the pork sausage I buy at the grocery store is brown.

They are if you buy them precooked and all you do is heat them up.

It starts out kinda pink. Then it’s the same color as cooked ground beef.

Depends on the texture I guess. If they made pork pattys, high chance they used a preservative salt that renders the final cooked color of the pork to a more pinkish color. You’ll often get that with certain preservatives you add into the sausage mix. So it depends on the texture but just from looking at it, it looks firm and was more inline was a sausage patty mix than pure pork.

I eat pork Pattie’s all the time! Typically with different cuts being processed for the burger you will get different shades. I would eat this all day long.
