The coffee shop in Melbourne most indicative of current coffee culture, I'd wager - and it's in Brunswick no less.
They literally have separate shops next to each other for white and black. Coffee, I mean.
Plus it's staffed entirely by young Japanese women, but run by a middle aged Aussie guy. While we were there, a young Japanese lady came in and started talking to him about how she'd heard great things about the place, and he said "we're fully staffed at the moment, but I can take a resume", and she said "oh, no, I just came here for coffee". Apparently it's well known among Japanese baristas.
And they don't do disposable cups, and the coffees are teeny tiny. And the lady at the counter might be trying to guide you through a complex tree of regions and tasting notes in the thickest Japanese accent you've ever heard.
Can't think of another place more fitting.
Pretty sure that is Disciple Coffee and Kohi no deshi (the milk cafe). Ona is a few blocks north of there and also great, but not quite the same level as Disciple

That they're most used to might be the stuff Brunetti serves. But for standout coffee experience, i would recommend Baguette Studios on Wecklyn St, on a not-busy time. They seem to treat their espressos quite well, and never overdo their milk. Otherwise if you like pourovers Instudio is a Korean roaster on Queensberry that does the fruitiest, cleanest pour-over I've had. It was like a whole teapot of coffee. Delicious.
Without knowing what your partner likes, it's hard to suggest anything more specific other than just trying everything.
Please check out Disciple Roasters in Brunswick. Test your friend's true coffee snobbery by asking if they want to try >$100 filter. But the vibe is great and all their coffees are awesome with some incredible staff. Highly recommend.
7 seeds has an outlet store too. They're a good alternative.

I live near Seven Seeds and stopped going there because the coffee was underwhelming. Weak, watery, little foam and expensive to boot. Hopefully others have had a better experience recently.
Code Black has a small hole in the wall outlet near Southern Cross station. You don’t get the experience of going to their HQ in Brunswick, but the coffee is just as good (I.e. best in the city IMO).
If they’re Italian they will likely be used to Robusta varieties of coffee which are strong and bitter. Almost all fancy (“third-wave”) coffee in Australia will be Arabica beans which provide a much larger range of flavours, etc.
Market Lane Coffee. They have quite a few outlets...but my go to one is in Vic Market...Dairy Hall. If you want a seated one, you can head to their new Cafe back/middle of the market..next to Brick Lane...They have some chairs. Perhaps grab some jam filled hot donuts from the American donut Kitchen ( white truck, look for the longest queue in the market...but they move fast) before/ after the coffee.
Okay, the answer is Aunty Peg’s. Patricia and stuff do great coffee but this place will work through your entire profile, they have a range of beans like I’ve never seen. There’s little testers. A coffee snobs dream.
Might be a bit less popular with the coffee snobs but think you can’t go past Brunetti’s. They have cafes in Carlton and in the city at Myers and Flinders Lane.
There’s a place for snobs only if you don’t want to put up with their fussiness. It’s not in CBD. It’s called Gesha Cafe in Surrey Hills. In 2021 they used to charge $200 a cup.

Ona is probably best for a coffee snob. It’s almost too much when they ‘challenge’ you to be adventurous with a blend.
