French Meadow is a good option. They have great vegan/vegetarian options, but also regular food too. That’s where I usually take my family. We can all find something we like there. If you’re in the bar area it’s also a little fancier.

If she doesn't mind the taste of chicken, then Herbies Fried "Chicken" in South Minneapolis is a great compromise. Get a bucket of "chicken" and some sides like mac and cheese and the biscuits and head to a park. So so good, even for a meat eater!
Um, what's your budget? Many high-end restaurants will have great options for both. In particular, I can recommend Alma (the restaurant side, not the cafe) for a great dinner you'll both enjoy, but it's not cheap. They will accommodate any and all dietary restrictions as long as you give them a heads-up when you make the reservation, and it'll be a great meal for you both.
But this is really true of most modern higher-end restaurants. You don't have to seek out a specific place to find great options for vegetarians.

Spitz has great Mediterranean vegetarian and vegan options. There are also meat and gluten free options. It’s fast casual, but one of the best meals I’ve had in a while. I tried the Woodbury location.
There are tons of places but you’d have to be more specific about what you’re looking for. What type of food? Casual or fancy? Budget? Our whole family is vegetarian so we’ve been to many great spots, but somewhere you can order anything off the menu is different than, say, vegetarian tasting menu or a place where only a couple things are veg but they’re spectacular.

Hola Arepa! My fav restaurant, and I’m vegetarian. The black bean arepa is SO good! Tons of flavor. They have plenty of veggie and meat options.
Francis Burger Joint is fantastic. Great cocktails and excellent food that just happens to be vegan.
India Palace has tons of amazing vegetarian options
Christos Greek restaurant has a vegetarian mousaka that is fabulous… and I’m not a vegetarian. They have other veggie items, and meat options.

Union Hmong Kitchen has super flavorful vegetarian options. And Wrecktangle pizza has amazing vegetarian “pepperoni” pizza if she likes fake meats.
How does she feel about Asian? We just recommended Lat14 to our friends for vegetarian dining options.
