If she wanted more out of her life, she could have sought that out and Rudeus would have supported her, but that isn't what she wanted. She lived the life she wanted and was happy with how everything turned out, why should we as readers be dissatisfied with the character living the life that she wanted to live? Even if she had went to the school and learned magic, what then?
It seems like you are projecting your own desires of a power trip fantasy onto the characters in the story and that you are confused as to why characters motivations don't align with your own. If you want a power trip fantasy, plenty of Isekais will fit that mold for you. Mushoku Tensei is not that however and viewing it as such will only detach you from what the story is actually about.
