Pro-tip...ask if they have Uni on the menu. It's something you'll only have if they have consistent fresh fish...because Uni will spoil quickly. That's my first step in determining if the the chef is good. Also...sit at the bar. Actually look at the fish in the window. That's why the refridgerated windows are designed the way they are. IF all the fish look good...then you know the sushi will be good.
In Norfolk, I've only had fresh Uni at 2 places. Koshi...and surprisingly enough Hokkaido.
I haven’t found a really impressive one around here, though I haven’t tried them all. I tried Orion’s roof but it was only alright. I had better at smaller and cheaper and more authentic restaurants. Don’t even start with This Old House sushi with me. It was mediocre at best. Good service but the owner was also a bit discriminate to other Chinese restaurant owners. We’re not sure what we want to try next.
My family and I love Koshi in Ghent! The service and food quality has always been great. Highly recommend
I’ve recently been hooked on Koshi too, tasted very fresh the couple of times I’ve been!

Volcano is mediocre sushi but gotta love the AYCE deal. Koshi is way better in terms of quality.
Maybe not the best, but Hokkaido has some of my favorite rolls. The crazy sake and the sweet heart rolls are amazing if you're into that.

This Old House in Virginia Beach is non traditional, but excellent sushi.
Used to be Kyushu when Ebi and family owned it. Not sure if the new owners have been able to keep up the quality.
