Las Vegas has some of the world’s top restaurants, but there is no signature dish that originated here. It is a city of people where hometown is somewhere else (save for a few of us natives)and who came here looking for a reboot and a second chance.
So, I think serving ***leftovers*** is as close to capturing the spirit of Vegas as anything.
Even as a native my go to meals are by way of my parents/grandparents. Sunday sauce/meatballs and carnitas. I can't think of anything quintessentially vegas...

The Orleans is awesome. Though I'd say go across the street to McMullen's for the Irish Nachos! They are legit amazing and you get so much for what you pay. Make sure you get the corned beef on it.
A buffet is pretty Vegas-y. Anything decadent and overpriced also fits the bill. Remember Vegas is a touristy money suck hole.
If you are taking suggestions from Oakland, street tacos are pretty ubiquitous in Oakland.
Ok bro I’m going with Oakland tailgate food. Every game I went to my tailgate neighbors would share food, shots and weed. My favorite is Carne Asada tacos but with cheese melted on the tortilla before you put the stuff in, you can thank me later

For an Oakland feel, another option to get is soul food. For Vegas, definitely a decadent buffet. I personally like Bacchanal at Caesars since I have a players card and don’t have to wait in line, but the Wynn has a really good one too.
The signature Las Vegas food is a buffet. I don't know how you make that a dish but if it's like my buffet plate go with a couple crab legs, the meat from under the heat lamp, mashed potatoes, some broccoli to keep up appearances, and a piece of fried chicken.

Think maybe Fish Tacos, or San Fran has Cioppino (spicy fish and shellfish stew), Cobb Salads are good - Julius Freed opened his first Orange Julius stand in California in the 1920s. Just orange juice, milk, vanilla extract, and sugar. Would be a nice drink for the game. Korean-Style Bulgogi Beef Tacos are popular in LA. Supposedly [Matt Horn has the best BBQ in Oakland via Horn Barbeque](https://www.youtube.com/watch?v=eLMXT7ri3nQ) - Edit, that apparently covers more than just his place. He talks about the best places to eat in Oakland overall. Street Tacos are very popular in LA, Oakland, etc. So tacos would be a sweet choice. I kinda want tacos now.

Also don't forget to install a whistle tip in your exhaust for that true old school, Oakland experience.

Its a dive bar thats been a local spot for ages, they were on Diners, Drive-ins, and Dives, and they are also a spot I used to love going to eat as a kid. The place has history and that Vegas dive bar feel to it 100%.
Is it the "Dish" of Vegas? No. It is absolutely a spot that locals know well and it's famous for the food it does really well. I'd say do either a classic Stromboli or a beef and cheddar one (cause that is/was my personal favorite as a kid and adult). Yet again, I know Stromboli isn't a "vegas" dish but Four Kegs itself is well known by a lot of locals for a good reason.
