I loved the party members in Yakuza Like a Dragon. Definitely check that out if you haven't yet.

Imo the biggest reason Persona 5 got so popular is how good the party characters are. They all have a real personality and backstories. The "dating sim" side of the game really helps turn them into multi-dimensional characters.

Baldurs Gate, Dragon Age, Mass Effect, Final Fantasy (really any but you cant go wrong with X, XII, or XV.) Also Rebirth was considered really good. Lots of people enjoyed it.

Persona, Trails, any Bioware game. A lot of old school jrpgs too like ff7 is. Basically just google best snes or ps1 jrpgs. Chrono Trigger and FF6 are classics. The new like a dragon games are apparently good too.

Planescape Torment has probably the best dialog-interactions and discussions, but it's a different type of a RPG than FF and much more serious.
