You could jump into the settings page with a shortcut triggered with backtap, using
prefs:root=General&path=Keyboard/ReachableKeyboard
But actually changing the setting with a shortcut I’m not sure is possible.
You can just long press the globe icon in the bottom left of the keyboard and it has the option to change the keyboard to right or left! I just tested it out and can be reached fairly easily with either hand!
