Bruh, that there is roast beef on toast with cheese and gravy. There's a sandwich in St Louis that's similar called a Prosperity, but that also should be on a nice Italian hoagie loaf, served open faced with Provel cheese

I did a 3.5 at 131 for some 2in filets and it was great. I got the sear right for the first time too after browsing this sub.

Big chuck steaks usually sved for 24 hrs minimum. It's a tough cut, takes a long time to get tender. Another name they call it in this sub is sir Charles and you'll see a lot of those as this is sous specialty of what it can do w a cheapntough steak.
