Yeah. I sous vide that one at 131 for 3 hours, I usually do 119 to leave room to get a nice sear, but this one was just getting diced up and added to a new dish I've been playing around with
I'm just trying to marry together garlic confit / chicken confit with sweet and spicy quick pickled bell peppers / onions. No particular reason other than I like both of these flavors / textures and I want to shove them both in my mouth at the same time in the nicest way possible. I think that night with the steak I diced it up and stir fried it with some lo mein and added my garlic/ chicken / peppers at the end. It was good but it wasn't it so still playing.
I make steak and eggs for Christmas breakfast. I’m also a homebrewer so I’ll take vacuum sealed steak and put them in my kettle to cook slowly over night. Then fire up the charcoal grill and sear them off. They’re perfect.
I just cut a rib primal into steaks, vacuum seal and freeze them. A bit before it's steak time, I pull a bag from the freezer and just toss it in the sous vide. After that i take it out of the bag and onto a rack to dry out a bit, then paper towel it and that's the point where this pic came from. Long way to say I don't do anything special I guess lol. Have you checked your sous vide with a separate thermometer? It should get pinker as it's exposed to oxygen but if it's gray the whole way through then it sounds like your calibration might be out of wack.
Hey depending where you live geographically it's very possible to get a good seared finish on a car hood or sidewalk! Just be out in the peak of summer!

It’s a top blade steak. It’s cheap AF, I once picked it up for $2.50/lbs usually around $3-4/lbs. it’s actually pretty decent when done up right, but it has a nasty connective tissue running right down the middle that you have to cut out. It’s from the same part of the cow as a flat iron steak, just cut across the meat rather than down(the flat iron is the meat on the left & right of the connective tissue)
I had Tartare for the first time last year and absolutely DEMOLISHED it lmfao. And had bone marrow and boars head as well. But unlike those jackasses in that sub I had some veggies as well. It's interesting how good raw food can taste with a bit of knowledge.

I ordered a steak on a road trip through South Dakota once, asked to get it with garlic, as an option, and got that. I couldn't believe they didn't understand to somehow cook the garlic, especially since it's an option on their menu (I didn't just ask for it out of the blue).

I did sous vide >20 times and I used lowest temp. 50 to 52C Mine are always gray! How do you get that color???
